
Tico Rico Pineapple Relish
This relish is the bomb on grilled fish like Mahi Mahi(dolphin), Wahoo or Grouper.
Ingredients
- 1 cup diced fresh pineapple
- 1/2 cup unsweetened pineapple juice
- 1/4 cup fresh lime juice
- 2 Tbsp finely chopped scallion greens
- 1 Tbsp Iguana Mean Green Jalapeno Pepper Sauce (or more to taste)
Directions
Combine all ingredients in a non-metallic bowl and refrigerate for 8 hours before serving on top of grilled fish to allow flavors to marry.
